Bake Along #117 – Lemon Brownies

While I was going through what next will fascinate me, these lovely brownies caught my eyes. Lemon citrus flavor which would also be fudgy with the right amount of sweetness and the term ‘Brownies’ will make it to die for.

Ingredients:-

  • All-purpose flour – 125 gms
  • Granulated white sugar – 200 gms
  • Salt – 1/4 teaspoon
  • Unsalted butter – 150 gms
  • Eggs – 2
  • Egg whites – 1
  • Lemon juice – Juice out of 2 lemons
  • Lemon zest – Zest out of 3 lemons

Glaze –

  • All-purpose flour – 125 gms
  • Granulated white sugar – 200 gms
  • Salt – 1/4 teaspoon
  • Unsalted butter – 150 gms
  • Eggs – 2
  • Egg whites – 1
  • Lemon juice – Juice out of 2 lemons
  • Lemon zest – Zest out of 3 lemons

Method:

1. Pre-heat oven to 180 degree C. Butter and line up a square baking tray with butter paper with about 2 inch hanging outside on either sides of the pan. Butter on top of the paper too.

2. Add eggs, whites, lemon zest and lemon juice into a bowl and whisk them together. Set aside.

3. Add butter and khoya in the bowl of your electric beater and beat on medium high speed for 3 to 4 minutes until they become light and fluffy.

3. Add flour, sugar and salt into the bowl of your electric beater. Beat until the dry ingredients are well combined.

4. Add the butter and beat in slow speed just until they are combined.

5. Do NOT over mix. We are looking at a brownie texture, so we don’t want to incorporate a lot of air into the batter. So beat slow just until combined.

6. Add the eggs-lemon mixture and beat on slow speed until the batter is all combined.

7. That’s the final batter. It may look curdled at the moment, but it will be fine.

8. Pour the batter into the prepared cake mould. Smooth the top. Tap it down once to release air pockets if any. Bake in the pre-heated oven at 180 degree C for 25 minutes. Do not over bake, else it may lose its moisture and become dry.

9. Cool on wire rack until it reaches complete room temperature.

10. Add all the ingredients in a bowl for the glaze. Use a wire whisk to combine everything until smooth.

11. Remove the brownies from the pan by lifting the hanging over butter paper. Set it on top of your counter. Pour the glaze on top of the cooled lemon brownies.

12. Spread it out evenly over the top of the brownie.

13. Let it set in room temperature for 1 hour and then cut them into squares using a knife or a bench scrapper.

I bet you will be bowled over by the flavor of the these sweet and sour brownies, so fudgy and melt in your mouth.
